On April 22, 2012 more than one billion people around the globe will participate in Earth Day 2012. Earth Day is a day earmarked for action; a chance to show how important the environment is to you. The message of Earth Day can expand far beyond this one day-it can be a theme carried over into our everyday actions and efforts.
In celebration of Earth Day Cascadian Farm sent me an Earth Day Celebration Kit. It arrived in an awesome picnic basket and included Cascadian Farm products, VIP coupons for free products and recipe ideas, along with an extra kit for a giveaway to one lucky reader of Groovy Green Livin!
Organic feast
It’s baseball season for two of my sons, which translates to being out on a baseball field most nights of the week. Trying to squeeze in a decent meal is somewhat tricky, but with a little planning we are able to stick with our healthy eating habits. In keeping with the tradition of celebrating Earth Day every day, we decided to pick a random night and prepare an organic feast together.
My kids love to cook, so it was relatively easy to get them involved in the process. I’ve learned over the years that when they help out they are more likely to eat the final product. We picked out a few recipes from the recipe booklet that was sent along in the kit. Each recipe used some of the great products from Cascadian Farm.
Buying organic is always the better option. Organic food is free of pesticides and other toxins commonly found in conventional products. It’s not always possible and can be cost prohibitive, but we try to buy organic as much as possible. It’s also important to remember that organic doesn’t always mean healthy. It’s important to read the ingredients in every product, organic or conventional.

My favorite organic meal is a raw, organic, green smoothie! I use mangos, bananas, strawberries, pineapple, coconut water, and a big handful of spinach or kale! Num 😀
Everything we make at home is all organic, but the meal we are loving this week is lentils with olive oil, onion, tomato, spinach, elbow pasta, and cheese 🙂

I love having organic free-range chicken out of the crock pot with some organic sauteed veggies on the side like peppers, onions, mushrooms and kale!
I am a sucker for homemade organic chicken parm! If you count cheese, crackers, and grapes as a meal that is really my favorite!

Most of the meals I make these days are for my son. And his favorites are apples and sweet red peppers. Both perfect to go organic!

I just brought Cascadian Farm granola bars to my son’s t-ball game. The kids loved them as much as our boys do 🙂
My favorite thing is actually broth from free range chicken and veggies. And the carrots in that broth. Oh my…yummy!

I make a very simple kale and quinoa dish in my rice cooker. Cranberries and pecans with some cinnamon and a touch of apple juice…it’s a quick fix it and forget it meal for my busy schedule!
I love Cascadian Farms products, from their grape jelly to chocolate o’s cereal to their frozen fruit, they are a staple in my kitchen and have been for a long time!Pretty much every meal is an Organic Earth Day Feast with Cascadian Farms in our house!!!
My fave organic meal is a garden salad topped with black beans and corn. Yum!
My favorite meal is chopped up raw veggies (cucumbers, carrots, celery, red peppers) with a delicious cashew dip that taste kinds like egg salad. i know…weird. But so good!
I big HUGE salad! Filled with spring mix, tomato, carrots, peas, cucumber, peppers, egg pieces, croutons, etc! I just love love love a nice organic loaded salad!
Favorite organic meal? Probably an enormous salad with nuts and cheese on it.
I love a large, fresh organic salad! Organic veggies just taste so much better and they’re even better if I find them locally.
I like fresh trout (caught by the spouse) with organic greens.

My favorite organic snack is cascadian farms granola with yogurt…my favorite meal is build your own tacos: beans, rice, fresh tomatoes, lettuce, olives, sliced peppers, all served with salsa and guac…YUM!
We love eating any local organic produce our farmer puts in our CSA 😀
